Caramel Cake

Picture of caramel cake with caramel drizzle and fudge peicesWell, I think this is most definitely my favorite cake of all time! I just love caramel! And when you put caramel and cake together it is just heaven. I use this recipe more than I thought I would, I love to make this cake into a 4 layer cake, cupcakes or into a Salted Caramel Pretzel Cake. I think it works best sandwiched together with salted caramel buttercream and a swirl of salted caramel.

This recipe is enough to make 4 layers of a 8 inch tin. It is pretty similar to a regular vanilla sponge recipe, however the colour is more caramel coloured- due to the brown sugar.

Banana Bread

Do you ever need an excuse to bake? Do you have overripe bananas? It’s literally the best excuse to bake, you save wasting good bananas and you get banana bread in the end. I love baking this, and it has some added bonuses, because it has bananas in it you can basically eat it at any time of day: breakfast, supper or a snack. It is a simple bake, only takes about 10 minutes to make, but does take a while in the oven.

Even though this cake has some spices in it, it isn’t too strong. I am personally not the biggest fan of cinnamon and ginger, but in this cake they work well together and aren’t overpowering.

Milk & White Chocolate Cookies

This cookie recipe is by far my favorite, I discovered it about 4 years ago when I was watching Youtuber Tanya Burr . Honestly I am not sure what makes these cookies so good, in fact, scratch that,  it is probably the chocolate. This recipe allows you to use any of your favourite chocolate. I usually go for Cadburys dairy milk and milkybar white chocolate, but can use whatever chocolate you fancy, or have left in your cupboard. This simple recipe doesn’t take very long to make and I quite often have the ingredients in my house which is always a bonas.

Salted Caramel

 

I always held back to making caramel as I heard it was so difficult to make, and that you needed to have candy thermometers. I was SO wrong. I wouldn’t go as far as saying it’s easy to make because it is still very easy to muck up, but by using this simple recipe it does simplify it. This recipe is perfect for any bake you want to add a little extra ‘oomph’ to. This sweet, salty, buttery goodness is literally like liquid gold. I love to add this salted caramel into lots of different bakes: in the middle of cupcakes; adding it to buttercream to make salted caramel buttercream; adding it as a new layer into my mega cakes; adding it to apple pie or even drizzling it over ice cream, the opportunities are endless.

Rainbow Cake

Do you ever just feel in the mood to eat a rainbow and feel like a unicorn, cause I do! This rainbow cake is one of my favorites bakes its just so colourful and fun to make. The best bit of making this cake is obviously when you cut into it and look at the surprised look on peoples faces when they discover the rainbow.

Double Chocolate Brownies

Do you ever feel in the need for a chocolatey baked good? Well my next bake is double chocolate brownies and these will definitely meet your needs. These are incredibly chocolatey and will be any chocolate lovers dream. This is a straightforward recipe and doesn’t take too long to make- so no excuses. When I was baking these I had a craving for everything chocolate so I customized these by adding white chocolate chunks. You could add whatever you’re in the mood for: chocolate chips, chunks of your favourite sweets or you could even swirl through some peanut butter. I love my brownies gooey and fudgy, and by adding chocolate chips to the mix, it’s the cherry on top, as it creates a yummy gooey, melty creation.
