Double Chocolate Brownies

Do you ever feel in the need for a chocolatey baked good? Well my next bake is double chocolate brownies and these will definitely meet your needs. These are incredibly chocolatey and will be any chocolate lovers dream. This is a straightforward recipe and doesn’t take too long to make- so no excuses. When I was baking these I had a craving for everything chocolate so I customized these by adding white chocolate chunks. You could add whatever you’re in the mood for: chocolate chips, chunks of your favourite sweets or you could even swirl through some peanut butter. I love my brownies gooey and fudgy, and by adding chocolate chips to the mix, it’s the cherry on top, as it creates a yummy gooey, melty creation.

Ingredients

  • 200g dark chocolate (roughly chopped)
  • 175g unsalted butter
  • 325g caster sugar
  • 130g plain flour
  • 3 eggs
  • White chocolate chips

Method

  1. Preheat the oven to 170°C and line a baking tray with greaseproof paper. I use a silicone square pan so that the brownies won’t stick to the edges.
  2. Melt the chocolate and the butter in a heatproof bowl over a pan of simmering water. Once the mix is smooth, remove from the heat.
  3. In a larger bowl add the sugar and then pour in the chocolate mix, mix until it is well incorporated. Add the flour and continue stir together.
  4. Add the eggs one at a time and mix until the mixture is thick and smooth. If you want to add chocolate chips, add them now and fold them through.
  5. Spoon the mixture into the prepared tin, making sure to spread out into the edges. Bake in the oven for about 30 minutes or until it is flaky on the top but soft in the middle.
  6. Ideally I would say to leave the brownies to set in the tin, but let’s be honest I normally just want to dive straight in. The cooling period is always the worst time for me; I am not a patient person. So if your like me and wait about 10 minutes before you give in to cut your brownies, you might find the middle is a bit jiggly, this will firm up when they have fully set. You can decorate your brownies by adding some melted chocolate, just to make them even more of a chocolate overload!
